Update

Well, I made it through my first week of school and let me tell you I was exhausted!! I'm so glad I started taking action this summer to improve my health and my families health so we could continue what we had already started. This is the time of year where I will definitely find out if I can sustain it all! I've already changed a few things around like exercising more in the morning. I tried out my first morning Barre class and it was a great way to start out the day! I loved doing Yoga while everyone was still sleeping at home, it was super peaceful! Finally, packing my lunch is the next thing I had to change up from last year. All fresh veggies and fruit and lemon water or left over dinner, delicious! Of course the added fruits and veggies from Juice Plus too! It's a feeling of relief to know we are all getting an additional 17 fruits and veggies every day! Thank You

A big thank you to my very good friend Karen for giving me a great workout idea! She shared how she downloads a Yoga workout from You Tube to do at home and even gets her kids involved! Brilliant and do-able! So this morning at 5:30 I got up (without my girlies this time) and completed my first You Tube Yoga workout. It was so relaxing and quiet and was a great way to start the day. Next time maybe I'll wait until my girls get up and have them try it with me, or maybe I'll just stick to some Mommy Time! :)

Biggest Challenge Yet

Wow what a busy week!! I think my biggest challenge in my mission to lead a healthy and active lifestyle is coming up. I go back to school this week and we will fall into a routine of school for mommy, preschool for my girls, fall activities, etc... My challenge will be to not get so caught up in it, I start to get lazy. I know my story in the past has been, "I'm too tired, I'll do _____ tomorrow." (Fill in the blank with whatever activity never seems to get accomplished.) I have to keep reminding myself of why I wanted to become 1 Healthy Mama in the first place and that my two most important reasons will be watching and copying what I do!

Here's my action plan so far:
1. Stick to my workout plan of Turbo Kick and Barre and getting up early on the off days to work out downstairs before the rush of the day begins.
2. Pack lunches the night before. (Hope for leftovers from the yummy dinners I've been making, we don't usually have too many leftovers in this house!)
3. Get a shower and at least start to get ready before my girls get up. (They get up so early these days!)
4. Remember that STRESS is just another word for FEAR! When I'm starting to get stressed out I will stop and ask what am I afraid of and I will confront this fear head on. (In the past, it's usually been the fear of not getting it all done, my new belief is "I have all the time in the world!")
5. Continue to plan our meals and grocery shop according to what I'm making. I can chop the vegetables the night before and can cook the Quinoa the night before when the recipe calls for it to be cold.

I'll let you know how it goes! I feel motivated and confident! I GOT THIS!! :) Here's to being 1 Healthy and Stress-Free Mama!!

Last Week

I wanted to share some of the recipes I followed last week. After another successful week of avoiding processed fats and meat I'm feeling great! It's funny, but some days my biggest issue is not drinking enough water. When I don't get enough I can tell a noticeable difference in my energy level. It's my mission to drink enough water this week!!

Visiting the Fair

We took our girlies to the fair today and had the best time! I was so thankful to read online that you can bring food, so we packed a picnic lunch- salads, fruit, and peanut butter and jelly for the girls. I'm trying out a new all natural jelly with less sugar. I was shocked to see how much sugar is in jelly!! I would love to know what other moms use. My youngest could eat PB&J every day!

We walked through all the animal exhibits, got the girls faces painted and rode a million rides. It was my first time on a ride in nearly 5 years. I was shaking on the Ferris Wheel, I've become such a wimp! It was so much fun riding with my big girl though!


By the end of the day we were all totally exhausted. After an ice cream treat (what's a trip to the fair without it) we headed home for a delicious dinner, kinda backwards I know! 😉 Avocado with Bell Pepper and Tomatoes

Now, to go collapse on the couch!!

Portobello Mushroom Pizza

I tried a new recipe tonight that I found on Pinterest for Portobello Mushroom Pizzas. Now, I love mushrooms, the hubby not so much! I thought I'd take a chance, after all it has cheese on the top! I wouldn't tell him what our surprise dinner was until it was served. His eyes about fell out of his head when he saw it. But... Guess what!?!? He ate one whole mushroom pizza!! Go me!!! He actually said, "I could eat this again!" Yay, success!!

Delicious!!

I just had to share the most delicious dinner that I made tonight!! Quinoa Stuffed Peppers. They were seriously amazing!! Even my hubby who is not a fan of stuffed peppers said they were amazing!! I love finding such healthy and delicious recipes to make and share. My girlies... well they each had a bite and decided they would save the rest for Mommy. So sweet! I'm not giving up though!!
